This year’s Dairy Council Conference took the form of a webinar on Tuesday 23rd March, which examined the impact of the ‘food matrix’ on the nutritional and health properties of food, and particularly dairy matrix effects.
Professor Alan Kelly, University College Cork and Dr Aileen O’Connor, Food for Health Ireland at University College Dublin explored the food science, nutrition and health perspectives of the dairy matrix. The event was chaired by Professor Michelle McKinley from Queen’s University, Belfast
